S'mores Gets an Upgrade

Although the original s'mores are quite tasty, this S'mores Bar takes the dessert to a whole new level. A graham cracker crust topped with a chocolate chip, marshmallow cookie layer and then topped off once again with Hershey's bars.



Summer: the best time of the year, sleeping in, late nights, swimming, vacation, sunscreen, being lazier than anyone on the Earth, being with friends more than family, and the occasional craving for a s'more.

Does that not pretty much sum up a summer?  I do think so, except occasional may be defined as every day in this situation.  But that's ok because what's better than a crunchy graham cracker, gooey marshmallow, and melted chocolate? Well, you may think nothing could be better that comes from the campfire, but these s'mores bars are the most delicious form of a s'more you will ever eat.  It's a combination of marshmallow chocolate chip cookie dough over a graham cracker crust and topped with Hershey's.

S'mores Bars
Graham Cracker Crust
  • 7 ounces graham crackers (about half a box)
  • 1/4 cup packed light brown sugar
  • 2/3 cup butter, melted
  1. Preheat oven to 325˚F.  Grease a 13 x 9 inch pan lined with was paper.
  2. In a food processor, pulse graham crackers until the crumbs are evenly fine.
  3. Add in the brown sugar and process to combine.
  4. Pour the melted butter over the crumbs and pulse until the  mixture is evenly moistened.
  5. Press into the bottom of the prepared pan. Bake until golden brown, about 12 minutes. Let it cool while you make the top layer. Do not turn off the oven.
Cookie Dough Layer
  • 2/3 cup butter, softened
  • 1 cup light brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups all purpose flour
  • 1 1/2 cups chocolate chips
  • 1 1/2 cup mini marshmallows
  • 3 regular sized Hershey bars, broken into pieces
  1. In a large mixing bowl, cream the butter and sugars.
  2. Add in the egg and vanilla.
  3. In a separate bowl mix together the flour, baking soda, and salt.
  4. Mix the dry ingredients into the butter mixture.
  5. Fold in the chocolate chips and marshmallows.
  6. Evenly spread the dough over the cooled graham cracker layer. Bake for 15 minutes.
  7. Remove it from the oven and press Hershey squares on top. Bake for an additional 10-15 minutes. Allow it to cool on a wire rack before cutting.
